I actually thought this had superb flavor, but the texture really threw me off and my husband could not eat it. He stated it was too crunchy with the greens. I discovered that it was so a lot better the subsequent day after marinating in the fridge. It will maintain nicely in a freezer bag. You can then simply take out what you need and saute directly from the freezer. Never had issues with it being mushy, and it cuts down on prep time. I advocate really cooking down your cauliflower if you want it to be rice-like or cooking it upfront and then re-heating the following day. Add the tomato paste, cumin, paprika, cayenne, salt and pepper. Stir to evenly coat the vegetables and cook dinner for 1 minute or till heated by way of. Add chopped cilantro and serve.
